  • Seafood Poaching Spices

    Spice Poached Seafood

    8 scallops roe off, 12 tiger prawns, squid rings, firm fish fillet cut into similar size pieces.
    • 100g Providore seafood poaching spices
    • 1 leek finely sliced
    • lemon rind
    • 1 cup white wine
    • 3 litres water
    • muslin for spice mix
    • salt & pepper to taste
    •  Mount of Olives lime infused oil

    Place Providore's seafood poaching spices into muslin and secure tightly with string.
    Place all the ingredients into a deep saucepan and bring to the boil then reduce to a simmer and allow the spices to infuse the liquid for approx 10 minutes. 
    Once infused place all the seafood in the liquid and poach 2-3 minutes. 
    Remove from the pot and drizzle with Mount of Olives lime infused oil and serve with a fresh green salad.
