  • Butter Chicken

    Ingredients

    • 1 kg Chicken pieces (thighs are great for curry)
    • 100g Providore's Butter Chicken Curry Mix
    • 50g butter
    • 1 onion
    • 2 cloves garlic
    • 1/2 cup chicken stock
    • 400ml chopped tomatoes
    • 375ml cream (can be substituted for natural yoghurt)

    Method

    Cut chicken pieces into equal pieces and toss through Providore's Butter Chicken Curry Mix. Set aside in fridge for a few hours, overnight if possible. Chop onion and garlic and cook in pan with butter until glassy.  Add chicken and cook through until sealed.  Add tin of tomatoes and stock and bring to gentle simmer.  Add cream/yoghurt to taste (more for a mild curry, less for hotter). Cook over gentle heat for 10 minutes.  Serve over steamed jasmine rice.
