Indian Cashew Biryani

1 pack Providore cashew biryani pack

3 tbsp. Providore garlic infused oil or rice bran oil

1 large onion, peeled and finely chopped

2 cloves garlic

500ml stock of choice

1 ½ tsp salt

½  tsp brown sugar

500g large diced chicken, tofu or pumpkin

2 tbs Lemon juice 

To serve

Providore Brinjal pickle

Natural yoghurt

3 tbsp. chopped fresh coriander

Method: serves 4

Heat a medium / large saucepan over low heat. Add oil , onion and garlic and sauté until transparent.

Add chicken, tofu or pumpkin and stir to coat. Sauté for two minutes. 

Add biryani pack to saucepan and sauté for another 2 minutes. Add salt and stock. Stir well, bring to the boil. Cook for 12-15 minutes over low heat with a lid.

DO NOT STIR.

Remove from the heat when rice is cooked.

Rest for a few minutes, add brown sugar and lemon juice. Fluff up with a couple of forks.

Serve with Providore brinjal pickle, natural yoghurt and fresh coriander.
