Preheat oven to 160°C, grease a 23cm spring form cake tin. Sift the cake mix into a large sized bowl.
In a separate bowl combine butter or oil, vanilla essence, egg and milk.
Mix the wet ingredients into the dry ingredients and mix until combined. Add the boiling water mix until a smooth batter is achieved.
Place in cake tin and bake at 160°C for 75-90 minutes.
Remove from oven when cooked. Let stand for 10 minutes before turning onto a cake rack to cool.
Try adding the zest of an orange and or 1/3 cup choc chips when mixing for a rich Jaffa cake.
Enjoy a slice with a Providore Coulis or Dessert Sauce.
